January 24, 2012: Midnight snacks

Lunch:

  • Leftovers!
    • Salad
      • mixed romaine
      • carrots
      • celery
      • cucumber
      • raw tofu
      • balsamic vinaigrette 
    • Eggplant Parmesan
      • Reheated and even better the second day! The sauce and cheese melt and break apart as soon as the mouth closes and the eggplant is soft to bite into
    • 1 piece of french bread
    • 1 cup red clover & cinnamon tea with a drizzle of honey
      • Warming and spicy
Snack:
  • 1 cup of fresh popcorn
    • popped on the stove here all the way from farmer john in Chicago!
    • I put a little too much oil in the pan and it unfortunately turned out to be a bit greasy, but still crunchy and appealing
  • 1 handful of baby carrots dipped in tahini hummus 
    • Energizing and filling
Dinner:
  • Turkey wrap
    • Honey-smoked turkey
    • A big heaping of alfalfa sprouts
    • Garlic hummus
    • Kalamata olive tapenade
    • Tomato slices
    • Flour tortilla wrap
  • 1/4 cup brown rice with teriyaki sauce 
Dessert:
  • 1 organic strawberry probiotic yogurt mixed with Fanny-May popped rice milk chocolate pieces
Midnight snack:
  • 2 stalks of celery
  • Freshly popped popcorn (straight from Farmer John in Chicago)
    • Seasoned with olive oil, nutritional yeast and a little salt...yum!
  • 1 honeycrisp apple
  • 1 cup chicken broth with sourdough bread crumbs mixed in, seasoned with fresh rosemary, salt and pepper 
    • For some reason I got hungry again at around one in the morning. Midnight snacks are the best!...until the next morning. I always wake up feeling heavy and undigested when I eat after 11 at night, but oh well. This was worth it :)
